Bottle of HYDE gin next to a filled gin glass with garnish in front of a flower wall with the HYDE logo

HYDE Gin

Hyde Bar on Forster Street is rightly known as the home of gin in Galway City and its collection has just increased with its newest offering, their very own gin. This is the second time the chic venue has created its own gin. The very limited batch was distilled and bottled by Clonakilty Distillery in County Cork. Clonakilty Distillery like the Connacht Hospitality Group is a family business, making this a perfect partnership.

The Blend

The Hyde Gin is a blend of three different distillations using 13 botanicals and a whey alcohol spirit. A base gin distillation, a citrus distillation, and a lavender distillation are used to make this unique gin. By using three separate distillations the maximum amount of flavour can be extracted from each set of botanicals before being blended at the maturation site to create a gin best suited to cask maturation.

The gin was matured for three months in a second fill European Oak Bordeaux red wine cask, which was previously used to create a single cask whiskey expression. It is these Bordeaux Casks which add their beautiful pink hue as well as the depth of flavour.

Hyde Gin is a charming rounded and complex gin that is a real delight, which opens up vibrantly when consumed. It’s best served with a chilled premium tonic and garnished with the citrus and pine notes of lemon & bay leaf.
